AVPN Approved Oven

Our pizza oven is an Ooni - one of only a couple of models and the only brand that the AVPN (Neapolitan pizza authority) recommends for domestic use. See here for more information. 

Essentials Before Starting

  • Read Safety Instructions in safety section below 
  • The pizza oven must be moved before use see safety 
  • The wheel locks must be unlocked to move and then locked again to either cook or store
  • The flue cap must be removed before use and MUST be replaced after so vermin can't get in! (wait until cold) 
  • Return oven to undercover so it doesn't blow away in a storm (we get fierce winds)

Shopping List

Shopping list for traditional Neapolitan Pizzas.

These can be bought at supermarkets (Coles/Woolworths). Substitutes can be used if you can't find them. 

  • Tipo 00 flour (We often just use Lighthouse Pizza flour) 
  • Yeast (fresh or dry) 
  • San Marzano tomatoes 
  • Fior di Latte (might need to get from a deli etc) 
  • Toppings (for traditional Neapolitan pizzas, less is more)


Buy Fresh Dough

We generally don't recommend buying pre-made (packaged) dough as it is often high in sugar and so burns easily. However Slow Dough in Kiama sells fresh sour dough, pizza dough. They keep limited amounts on hand or you can pre-order here. Price is $5.50 per pizza ball (at the time of writing). 

Slow Dough is at 19 Bong Bong Street (cnr Manning) and is open limited hours (also sells great pastry and bread) 

Gas Powered

The oven has been set up to use gas and we supply bottled gas to heat this oven. While this model can also be modified to heat with specialised wood, it requires significant modification to do so. For this reason no wood should be used in any way with this oven. 


As it is gas, we believe you can use during a total fire ban (compared with wood fired ovens which are banned) See RFS website for clarification and use common sense. 


Spare gas bottle is in the garage/games room 

Safety

The oven operates at extremely high temperatures so it is very important that safety instructions are followed. 

  • The oven needs to be moved from its storage place before use. 
  • Observe required clearances (1m all around and 3m above). See here for more info
  • Lock wheels once moved, before use and for storing
  • Remove flue lid
  • Do not use in high winds 
  • Do not leave on for extended periods when not in use
  • Never leave the oven unattended 
  • Keep children and animals away
  • Only move the oven back once it has cooled
  • Use safety gloves at all times


Old Oven Is Still Onsite But Not Safe To Use

Our old wood fired oven is still onsite but as it is badly cracked from over loving, it is not available for use.  We have not removed it as we plan to repair it for when we move in permanently.

We have replaced it with a gas one which heats a lot quicker and can be used on the front deck.
